Simple Spinach and Cheddar Quiche Using All ALDI Ingredients!


Looking for a great quality, low cost meal to serve during the week and impress the heck out of your family? Or how about a dish to take on your next brunch date to impress the heck out of your friends? Either way, we know you'll enjoy our Simple Spinach and Cheddar Quiche, which uses ingredients from ALDI, requires you to dirty only one bowl and tastes so good!


This quiche, right down to even the salt and pepper used, is comprised entirely from ingredients purchased at ALDI! But even if you DON’T shop at ALDI – keep reading! This short list of ingredient can be found at any grocery store and this simple recipe can be followed by anyone regardless of skill level.

Quiche: It's What's For Dinner. (Or Brunch. Or Breakfast. Or Whatever!)

I used to think the word quiche was synonymous with the word complicated but after making one on my own, I happily discovered that creating a quiche is actually quite simple! Since that discovery I’ve made quiches of varying complexity and simplicity – the beauty of a quiche is you can put as much, or as little, effort and ingredients into as you want. Sometimes I pack it full of ingredients and spend a lot of time fussing over it; but mostly, I just throw a quiche together, using whatever’s on hand in the frig. And regardless of how much time or effort I exert, I never EVER make homemade pie crust. Never. (Ain’t nobody got time for that!)

Living and eating on a budget, I purchase as many groceries as I see fit at my favorite grocery store, ALDI. Some of you ALDI mavens out there know what I’m talking about: you’ve had your own ALDI experience and are hooked on the excellent quality for unbeatable prices. But some shoppers out there just aren’t convinced – they’ve heard the bad press ALDI gets and have been led astray by it. As for those of you who already pledge allegiance to the ALDI, read on!

As I stated in the beginning of this post, this list of ingredients was purchased entirely at ALDI, but you can locate these items at any grocery store.

Ingredients needed:
  • 1 pre-made pie crust (you can use either the rolled up crust which requires your own pie dish OR the type that comes already in a disposable deep-dish pan)
  • 2 cups packed fresh baby spinach
  • 4 large eggs
  • 4 oz. (half a small bar) mild cheddar cheese, shredded (I shred my own, but you can certainly use the pre-shredded in a bag)
  • 4 oz. canned mushrooms, drained
  • 1 Tablespoon minced garlic (I buy the jar of pre-minced in water)
  • 1 cup milk (skim used here but any will work)
  • salt and pepper to taste

PRE-HEAT YOUR OVEN TO 375 DEGREES


I use ALDI's pre- made, rolled up pie crusts. These pie crusts come 2 per package, so you will be using only one. DOUBLE the ingredients above if you decide to make two quiches. #Obviously


Start at one side of your pie pan and gently roll the pie crust over to the other side.


Use your thumb to press the crust tight to the pan and push crust up to the edges. 
If the pie crust tears as you are rolling it out, that's okay! Simply press the torn sections of crust back together again.


Roughly chop the spinach and place it in a large bowl. Add in the garlic, mushrooms and salt and pepper to taste.


Thoroughly fold ingredients in bowl together and spread evenly into pie crust. 



Spread the shredded cheese evenly on top.
Remember, pre-shredded works, too!


No need to grab another bowl OR rinse it out! As it is, crack in the eggs, add the milk, salt and pepper to taste and thoroughly whisk it all together.


Pour egg mixture evenly over the spinach and cheese.


Place quiche into your pre-heated 375 degree oven and bake for 40-50 minutes, until crust is golden brown.


Remove quiche from oven and let it rest for 5 - 10 minutes before cutting into it.
*Tip: Quiche rises as it bakes so letting it rest allows the quiche to "fall" back down, making it more dense and less likely to fall into pieces as you serve it.


If serving for dinner, I recommend that you cut this quiche into 4 large slices or 8 medium slices.

If taking this quiche to a brunch with several people,
try for 12 tiny slices.
