Lightly Crusted Tilapia: It's What's for Dinner


I absolutely love tilapia; in fact, it's typically my go-to-pick when creating a recipe using whitefish. Tilapia is light, mild, never "fishy" and best of all, it's pretty cheap! 

I have used tilapia in the background of several dishes, like fish stew or fish tacos, but sometimes you just have a hankerin' for a nice fish filet as the main headliner. Using a minimal amount of ingredients, and paired with a simple vegetable, this lightly battered and pan-fried fish tastes great, looks impressive and is pretty quick and easy to prepare.


Ingredients needed:
  • 2-3 medium tilapia fillets
  • 1 cup all purpose flour
  • 1/2 teaspoon: dry basil, garlic powder
  • 1/4 teaspoon salt & pepper 
  • 1 large egg 
  • 4 Tablespoons milk 
  • ​1 teaspoon lemon juice 
  • cooking oil -just enough to cover bottom of pan  (canola used here​​)
Create the dredge: 1. In a bowl add the flour, basil, garlic powder, salt & pepper; mix well with a fork. 2. In a second bowl whisk together the eggs, milk & lemon juice.


1. Roll and coat each fillet in the flour mixture; shake off any excess.


2. Roll and coat each fillet in the egg mixture; shake off any excess.



3. Roll and coat each fillet in the flour mixture a second time; shake off any excess and set onto dry clean plate until each piece is finished.


Fry the fish: Heat oil in pan over medium-high. Once oil is up to temperature, shake any excess flour from fillets and place them on pan. Fry fillets for 3-4 minutes on each side, until golden brown.


Serve & enjoy: Remove fish from pan and place onto paper towel lined plate. Allow excess oil to drain from fish for at least 1 minute. Serve with your favorite sides and enjoy!


*For my side, I found some thin, tender asparagus and just lightly sautéed them in olive oil, minced garlic, salt and pepper. I finished both the tilapia and asparagus with lemon juice.
